Triple Layer Coconut Treats


Triple Layer Coconut Treats

Ingredients

3/4 cup organic Coconut Oil
1 Scoop Chocolate shakeology ( OR 1/4 cup cocoa powder 1 tsp honey)
1/4 cup natural peanut butter, smooth or crunchy and honey to taste



Directions

Heat coconut oil until it is melted. Divide it among three bowls. 

In one bowl, stir in the shakeology until completely dissolved. Or if using cocoa powder stir in with honey to taste. 

In another bowl, stir in peanut butter until smooth. Add honey to taste. 



In the last bowl, add to the coconut oil honey to taste.

To make individual candies, use a silicon form. I used a mini loaf pan, but mini muffin cups would work well,  as would candy molds. The pan I used it epicure. 

Divide the chocolate shakeology flavored oil among about 18 of the moulds just so it covers the bottom of each. 

Set the mixture into the refrigerator to set. Be sure the mold rests evenly. Chill for about 10 minutes. 



Once the first layer is set, Spoon or pour the peanut butter mixture over the chocolate layer. Return to the refrigerator to set. 

When firm, take out and pour the remaining clear layer over the peanut butter. Chill until ready to serve.


They Don't look all that great here but once you take them out they look awesome and taste amazing too!

Healthy Halloween Popcorn Mix


So if you read my blog post about needing to find a truly healthy snack to send for Asher's Kindergarten Halloween party on Friday, you will know that I was on the hunt for something I could send.  I went through all the Pinterest ideas and came up with only a handful of really doable recipes that I could actually make ahead and send with my kindergartner as I would be working and not able to deliver! 

So on my drive home from work yesterday I started brainstorming and came up with this Healthy Dark Chocolate and Dried a Apricot Popcorn mix. 

It sticks with the black and orange theme of Halloween without including candy corn or coloured chocolate and is truly a healthy snack! 

I just made a small batch to test it out last night but I'll be making a big batch to send to school with him on Thursday night. 

First I popped my popcorn in a brown paper bag in the microwave. 3 minutes for about 1/3 cup of popcorn kernels. 



Next you will want to remove all the up popped seeds. 



Chop up some dried apricots. 



I used the Enjoy life dark chocolate chunks to make it dairy free and melted them in the microwave. 



Then drizzle chocolate into your popcorn and stir in the apricots! 



Spread onto a baking sheet and leave it overnight to let the chocolate harden onto the popcorn. Scoop it into a large container or baggies to send to school in the morning. 

I'm going to get some paper ice cream cups to serve it in for the kids! 

Not only is this a good healthy snack for the kids, it's also great for adults too!

Snacking is the biggest challenge for so many of us.  But if we are prepared with healthy options in the fridge and cupboard it becomes so much easier to make the healthy choice and remain satisfied too.

Lately my evening snack, which by the way is my most challenging time of the day, has been a couple tablespoons of homemade peanut butter and an apple.

Healthy Team Lunch and Cleaning Assignment for Day 11

Today Asher's team has a Lacrosse game and it's my week to do the after game lunch! 

We decided to make sandwiches! So we hit up the local butcher to get their in house no nitrate or preservative deli meat, we picked ham and turkey. 

We then picked up 4 loaves of whole wheat bread, blueberries, raspberries, cucumbers, cherry tomatoes, juice boxes, and veggie chips! 

Last night after the boys were in bed Gord and I made veggie, ham, turkey and egg sandwiches. We baked a batch of cookies, made fruit skewers, cut up veggies and put them all into easy to serve containers. 

We got a lot done and I'm happy with our healthy lunch for all the kids on the team plus siblings and parents too!

The kids loved the Fruit skewers, and we had actually completely forgot to put them out and there were only 4 kids left hanging around when we did.... and guess what?  They are all gone!

I know some of the kids may have chosen not to have a sandwich because we used whole wheat bread, but I don't believe in over processed white bread so I decided that I wasn't going to provide that option.  Most of the kids were quite happy with the Sandwiches and I didn't hear any complaints!



Of course we had WAY too much food, and we will be eating sandwiches for dinner I guess but it was fun and you really see the kids bonding when you get them all together after the game!  So much fun!

We set everything up on the back of the tailgate and Fraser was having a grand old time trying to steal all the food he could reach!  At one point he actually grabbed a cookie and was about to take a big bite!  He did enjoy a bit of bread from one of the sandwiches and he also got a hold of a half a ham sandwich too so we let him gnaw on it a bit ;)

Fun day!

Yesterday was bathroom cleaning day and there wasn't much to blog about other than the usual bathroom stuff but today's assignment is: Clean closets ( hang up clothes, organize mittens, jackets, hats)!

I'll likely do some gardening this afternoon, have some family time, I have a call with one of my coaches scheduled and then do the closets later today so look for my post tomorrow! I've got some closets in serious need of organizing!!

Healthy snacking

I needed a quick snack before taking Asher to Preschool today so that I would have enough on board to get through my workout I'll be doing while he is there!

The organic Cashews were calling but I know I'll eat WAY too many if I do t put a few in a small bowl! Gotta watch the portion control even with healthy food! 

So I stuck a handful in a small bowl and cut up a few organic local strawberries too! Such a simple but delicious snack. 

Now I just need to get some water in me and I'll be ready for the Lower fix! Love that workout on the 21 day fix! It has given me so much definition and shrunk my calves which I never thought would happen! 

Now I just hope baby boy will have a nap while Asher is at school so I can get a good focused workout in!
