Frozen Printables

I found these awesome Frozen Printables this afternoon after trying to print several Olaf build a snowman printables that you just cut out and piece together   I thought Asher would have a fun time with that one.  Unfortunately none of them would print or the link went to an unrelated place.  *Sad face

I will find one that works!

For now I have found these cute Frozen Printable Colouring Sheets and have resized them to print properly on computer paper.  I have saved them in my google docs and shared them for you to use as well!  So if you would like to print on just click on the image which will take you to the document you can then print for your little frozen obsessed kiddo!

Enjoy!

Frozen's Olaf Printable Build a Snowman

Ok I did it!  I finally found an Olaf Build a Snowman image that I could work with!  I was able to make a google docs file to share with you too!

Just click on the Image below to print this page!

Asher and I put out Olaf together this morning while we were waiting for our Cinnamon Buns to rise in the oven.  He has been practicing his cutting skills so part of his job was to cut Olaf out.

The only part I had to do for him was the arms.

We had a lot of fun sticking Olaf to our back sliding glass door this morning!

Click on the photo below which will take you to my google docs form which you can print!

Mini Apple Pie

This afternoon I decided to make a Homemade Chicken Pot Pie and ended up with a little bit of left over whole wheat Coconut oil Pastry left over.  I can't let pastry go to waste so I threw together a couple of mason jar Apple pies for dessert!

First make the pastry

Ingredients

2 cups flour
Half a teaspoon of salt
One cup coconut oil or shortening
One egg
2 tablespoons cold water
1 tablespoon white vinegar

Combine flour and salt in a mixing bowl cut the coconut oil into the flour with a pastry blender.

Then beat the egg, water and vinegar together.

Pour the egg, water and vinegar mixture evenly over the flour mixture. Mix until moistened.

Divide dough in half and shape into 2 balls, cover and chill for 15 minutes.

Well the dough is chilling in the fridge take the time to make your filling.

I used only about 1/2 of one of the balls so 1/4 of the pastry for these apple pies and I made four pies.  So you could either make a whole bunch more, or make a chicken pot pie too!

Apple filling

4 Apples peeled and chopped
Apple Pie Spice

With my pastry made I peeled and chopped up four apples and tossed them with apple pie spice seasoning in a small bowl.

Then I scooped the apples chunks into the mason jars to make them about 3/4 full.

Using an unfilled mason jar I cut circles out of the pastry for the top of the pies.

Then we took it to another level with Coconut Cream!!

Like whip cream but sooo much better in my opinion!

Coconut Cream

Coconut Cream is SOOOOO GOOD!

It's so easy to make and everyone in our house just loves it.  I personally don't like whip cream all that much but I sure do love coconut cream.  So much flavour.

Ingredients

1 can coconut milk chilled
2 Tbsp Honey

1. You have to make sure to chill the can of coconut milk in the fridge for at least 24 hours so that it separates and you can easily scrape the white part away from the water.

If you can try to find this brand I have had the best
success for far with it.  Trust me I've tried all the
brands in our local stores and this one has the
most cream.
Hint: Do Not get low fat coconut milk.  It will not work for this recipe.

2. Once chilled, all you have to do is open the can, scrape out all the white stuff and put it in a bowl or mixer.

This is what your coconut milk will look like
after you have chilled it and opened the can.
After you have scooped out ALL the cream
you will see a small amount of coconut water
that has separated at the bottom.

3. Then mix on high until creamy.  Drizzle in some honey to add sweetness and mix it a little bit longer.

Look at all that CREAM!!!
Now mix is all up with the honey
until it's nice and smooth!

Then your done!

4. Use your coconut cream to top all your favourite desserts or just put some on a bowl of fresh fruit for a healthy snack!

Asher enjoyed his on top and Apple pie!

Homemade chicken and Yam Pot Pie with Coconut Oil Pastry

I was feeling like making something warm and comforting for dinner tonight.  Chicken Pot Pie came to mind and luckily Fraser was napping so I was able to put together the pastry and make the dinner a little more on the healthy side!

It doesn't take a lot more time to make things healthier or to make your food from scratch.  And often if you have the supplies on hand, almost any recipe can be made better for you!

So I decided to make this pastry using coconut oil instead of shortening. It worked out great, the dough was easy to work with and held together well too.

Here is the process...

First make the pastry

Ingredients

2 cups flour
Half a teaspoon of salt
One cup coconut oil or shortening
One egg
2 tablespoons cold water
1 tablespoon white vinegar

Combine flour and salt in a mixing bowl cut the coconut oil into the flour with a pastry blender.

Then beat the egg, water and vinegar together.

Pour the egg, water and vinegar mixture evenly over the flour mixture. Mix until moistened.

Divide dough in half and shape into 2 balls, cover and chill for 15 minutes or until you're done cooking the rest of the filling.

While the dough is chilling in the fridge take the time to make your filling.

Filing Ingredients

Two chicken breasts
Two cloves of garlic
One medium size shallot
Two medium size yams peeled and cubed
1/2 cup frozen peas

Heat olive oil in large frying pan.

Cook the chicken breast in the frying pan until brown with a little bit of salt and pepper to season it.

Once the chicken breasts are nice and brown you can transfer them to the toaster oven on a tray to finish cooking through.

While the chicken breasts are cooking in the toaster oven put a little bit more oil in the frying pan and then add your shallots and garlic until just golden brown and then add the yams; cook until they're tender with a lid on the pan.

Cream of chicken soup

1 tablespoon butter
2 tablespoons whole wheat flour
1 1/2 cups chicken or vegetable stock
1/2 cup cream
1/4 teaspoon of thyme
Himalayan sea salt and pepper to taste

While the yams are cooking you can get a small pot and melt a tablespoon of butter in it.

Add in the flour and whisk until it comes together.

Then add to that mixture one and a half cups of chicken or vegetable stock and stir until combined.

To That you will add about a half a cup of cream or whole milk and seasonings.

Stir on medium heat until thick and bubbling.

Once the yams are tender, add in frozen peas and cook until soft. Then mix in the cream soup and let bubble while you roll out the pastry.

Put it all together now!

Remove pastry from the fridge and roll out onto a floured surface. Cut into 1 inch wide strips.

Spoon filling into your baking dish.

Lay strips on top the filling in a criss cross pattern.

Fill in the holes with a third layer of strips to avoid excessive bubbling from the gaps.
Now either transfer right to the oven to bake until pastry is golden brown or cover and put into the fridge until dinner time.

This isn't an easy peasy dinner to throw together but it doesn't take very long and the effort is well worth it.

No cream of crap soup or frozen pastry used and this is a healthy wholesome dinner you can feel good about serving to your family.

Plus with the left over pastry I made a few quick mason Jar Apple Pies!

Dinner is ready to go and the house is smelling wonderful!

I really have found my life transformed by clean eating and Beachbody workouts and I want everyone to find their rhythm of what works for you with your nutrition and fitness so that it is indeed a lifestyle and not a crash diet.

I remember back to my first few weeks and even months of clean eating and it was HARD!  It was hard to kick some of my previous bad habits Diet coke and Cheetos.

It was hard to cut out the sugar in my coffee and to find recipes that our whole family enjoyed.  So this was a whole new ball game for me.  Yes it did take me time to understand but I was determined to change my body and make it healthy more than I wanted to stay the same!
If you are serious about learning how to eat clean get the book:  In Defense of Food by Michael Pollan.

It completely changed the way I looked at food!
