Bacon Egg and Cheese Stuffed Waffles



This mornings breakfast was a little creative and fun for me to make, but Gord wasn't too sure...Actually he was pretty sure it was disgusting and wasn't into it at all! 

I decided to make stuffed waffles with white cheddar, bacon and scrambled eggs inside. 

Here is how I put it all together...

What you'll need: 

Whole wheat flour
Sea salt
Baking powder
6 eggs
Milk
6 slices of bacon
White cheddar cheese

The process: 

First you will want to make the bacon and let it cool and crisp up. Then prepare the waffle recipe but don't combine the wet and dry mixtures until just before you are ready to put it all onto the waffle iron.

Waffle recipe

1 3/4 cups whole Wheat flour
1 tsp sea salt
1 Tbsp baking powder
2 eggs 
1 3/4 cups milk

Mix together flour, baking powder and salt.

Wisk two eggs with milk.

Set aside two mixtures. 

Fillings

Scrambled eggs
Bacon
White cheddar cheese





















  1. Prepare scrambled eggs
    • 4 large eggs
    • Splash of whole milk
    • Salt and pepper to taste
  2. Cook in skillet until fully cooked.
  3. Grate white cheddar cheese
  4. Combine dry and wet mixtures to make waffle batter.
  5. Heat waffle iron and the place a scoop of batter into each section of the iron. 
  6. Top with cheese, egg and crumbled bacon, then top with another small scoop of batter.



  • Close waffle iron and heat until cooked through.



Remove from iron and devour! 



Gord topped his with a little maple syrup while I ate mine plain.  

And you know what? I think he liked it! His comment was that they were tolerable, while he ate two more.... Hmmm.... I think someone didn't want to admit he was wrong ;)

Smoked salmon breakfast skillet


This breakfast was inspired by a few chucks of wild smoked salmon in my fridge. 

I pulled out the salmon first and from there I pulled out a bag of frozen leftover baby potatoes, an egg, heirloom tomato and avocado. And to top it off a little chipotle mayo! 

It was such a nice mix of fresh yet smokey! 

I may have to hit the grocery store for some more smoked salmon on the way home from baby group this afternoon!

Ingredients

50 Grams wild smoked Salmon
3/4 cup Left over baby potatoes
1 Egg
1 TBSP Milk
1/2 Heirloom Tomato Chopped
1/4 Cup Avocado sliced
Salt and Pepper to taste
Chipotle Mayo

Directions

  • In a medium sized frying pan, add the left over potatoes with a little olive oil to the pan and cook until warm.  
  • While potato is cooking, wisk together the egg and milk. Move potato to the the side of the pan and add in egg mixture.  
  • Scramble Egg until cooked, then mix with the potato and add in the smoked salmon and tomato.  
  • Season with salt and pepper to taste
  • Once everything is hot and cooked, remove from heat and plate.  
  • Top with Sliced Avocado and a drizzle of Chipotle Mayo.

Friday's Bread Pick: Flourless Sprouted whole grain Ezekiel Muffins


Ezekiel English muffins - I have to say I've been looking forward to trying these all week because I love English muffins, however I know they are typically full of garbage and not good for you at all.... Even the whole wheat ones. 

Check out what's in these english muffins I had in my freezer from Christmas...


Can you say YUCK!!!  Sure they are 100% whole wheat but the rest of the ingredients leave me wondering what I'd be putting into my body.  I actually googled a few of the items on that list... again....YUCK!

Here are the ingredients in the Ezekiel ones:


Nothing there I need to google to figure out what it is!  Phew

Gord and I both tried the Ezekiel English muffins this morning since he is off on Fridays. I left them on the cutting board for about 20 minutes to soften in order to make them easier to cut, but the package does say they can be stored in the fridge so you could always take one out the night before and put it in the fridge if you had the forethought! 

Cutting into them was easy and they toasted up nice, very soft! The flavour was nice and I felt like it stuck with me longer than had I had a typical English muffin. 



I will be buying these again! And I can't wait to make eggs Benny tomorrow morning with them using dairy free hollandaise sauce

**An Update** We now use these Muffins all the time and always take them camping with us for Breakfast sandwiches and eggs Benny too!
