Cleaner Starbucks Gingerbread Loaf

Cleaned Up Copycat Starbucks Gingerbread loaf

Every year I make this Gingerbread recipe.

When I worked at starbucks after highschool I grew to love a few too many of their pastries.  Luckily they have changed the recipes and seemingly reduced the quality and yumminess of their products so they are now much less tempting for me.  But their Gingerbread loaf and Cranberry bliss bars used to be very tasty!

It was my mom who made a copycat Starbucks gingerbread loaf recipe a couple years ago and I decided to try to clean it up as much as possible.  The loaf itself it very clean, using whole wheat flour, coconut oil and just honey to sweeten it. However there is icing on this bad boy so overall it's not exactly a healthy snack if you have the icing.  BUT compared to many of the treats that will show up at your next Holiday gathering, I'm sure this one would be a winner!

PLUS it's cheaper to make a whole loaf than to buy one or two pieces at starbucks, not to mention healthier!

Check out the huge list of ingredients in the Starbucks version of Gingerbread Loaf.

Starbucks Gingerbread Loaf Ingredients:

sugar, enriched flour (wheat flour, niacin, reduced iron, thiamine mononitrate, riboflavin, folic acid), apple sauce (apples, water, ascorbic acid), egg, unsalted butter (pasteurized cream), powdered sugar (sugar, cornstarch), ginger (ginger, sugar), enriched flour (wheat flour, malted barley flour, niacin, reduced iron, thiamine mononitrate, riboflavin, folic acid), water, orange juice (water, orange juice concentrate), orange peel (orange peel, invert sugar, citric acid), corn syrup, orange flavedo (orange peel, sugar and orange oil), salt, spice, natural flavor, food starch-modified, baking soda, guar gum, ground mustard, baking powder (cornstarch, sodium bicarbonate, anhydrous sodium aluminum sulfate and monocalcium phosphate), titanium dioxide, soy lecithin.

^^^^^^^^ Like what is half that stuff??? ^^^^^^^^

Well with out delay here is my Copycat Starbucks Gingerbread Recipe minus all the extra junk in the ingredients that your body doesn't want or need!

Ingredients:

For the loaf:

1 1/2 cups whole Wheat flour
2 teaspoons ground cinnamon
3/4 teaspoon ground cloves
2 1/4 teaspoons ground ginger
1 teaspoon salt
1/2 cup coconut oil
3/4 cup honey
1 teaspoon orange extract, or 1/4 teaspoon orange oil
1 egg at room temperature
1 cup applesauce
1 teaspoon baking soda

For the frosting:

1 8-ounce package cream cheese, softened
1 teaspoon vanilla extract or vanilla paste
1/2 teaspoon orange extract or 1/8 teaspoon orange oil (I used Pure Citrus Orange Oil)
1 Tbsp milk
2 1/2 cups confectioner's sugar
chopped candied ginger for garnish

Directions

Make the loaf:

Preheat oven to 350 degrees F.  Grease and flour a 9"x5" bread pan or use baking spray.  You can also use two pieces of decorative 7"x2.5" disposable bakeware, as pictured.  These do not have to be greased or sprayed.  Set them on a small cookie sheet to bake, and turn them around half way through the baking cycle.  These are perfect for gift giving!

In a medium bowl, sift together flour, cinnamon, cloves, ginger, and salt.  Set aside.

In the large bowl of a stand mixer, cream coconut oil and honey. Stir in orange extract.  Add egg, and mix well.

Mix the baking soda into the applesauce.   Stir into creamed butter mixture.  Add the flour mixture and mix until smooth.

Scoop the batter into prepared loaf pan(s).

Bake 40 to 50 minutes or until a toothpick inserted into the center of cake comes out clean.  If baking the 2 smaller loaves, bake for 30 to 40 minutes.

Make the frosting:

Beat the cream cheese until fluffy.  Add vanilla and orange extract.  Slowly beat in confectioner's sugar and milk.

Once the cake has cooled, evenly spread the frosting on top.  Garnish with chopped candied ginger if desired.

Once frosting has set, loosely cover with plastic wrap and refrigerate.

Healthier Peanut butter cups

Who doesn't love Reece peanut butter cups?

Well for years I loved them and every holiday (Easter being the worst) I would eat way too many peanut butter cups.

But when I have up all processed foods, that meant cheap chocolate bars too. Now I love to have a piece or two of dark chocolate and really don't miss cheap milk chocolate at all! In fact in the few times I've had another Reece cup I've been really disappointed and in satisfied from it.

I got these awesome silicon baking cups last year and all my muffins came out of them so easily that I decided to try making my own peanut butter cups in them with Dark chocolate and my homemade peanut butter!

I hit the jackpot!!

Sweet and salty and no guilt!

The only problem is that depending on how thick or thin my current peanut butter is, once you bite into the cup the tend to crack and spew peanut butter which can make them a bit messy!

Messy but oh so good!

I wanted to make up some peanut butter cups today since I was already baking so I decided to play around with the recipe a little and add some coconut oil to the chocolate and to the peanut butter to make hopefully help it stay together a little better when eaten!

What you'll need:

For the Chocolate:
1 cup Organic Dark Chocolate chips
1 TBSP Coconut Oil

For the Peanut Butter filling:
1 Cup Homemade Peanut Butter or Natural peanut butter
2 TBSP Honey
1 TBSP Coconut Oil

Directions:

First melt the Chocolate chips with the coconut oil and stir until it is smooth.

Then combine peanut butter, honey and coconut oil in a bowl and warm in the microwave for about 30 seconds to get everything softened.  Stir together and set aside.

Next you will put about a spoonful and a half of the chocolate into the bottom of each silicon cup and swirl it to come up the sides about half way.

Follow with a scoop of the peanut butter mixture and another scoop of chocolate.

yum!  Peanut butter filling going in

Now for the final touch.  A little more chocolate!

Put on a small tray and refrigerate for several hours or until the chocolate has hardened.

Then just pop them out of the silicon cups and enjoy!

Adding the coconut oil to them really did help reduce their messiness, and made them easier to enjoy!

These bad boys are so tasty and a nice little cheat day treat.  But they are still a treat even if they are made with great ingredients!

Almond Tarties

I LOVE Almond anything.  Almond tarts are one of my favorite treats, however they really aren't the best for you with all the white flour and sugar.  I wanted to make a healthy version of an almond tart using whole wheat flour and honey instead of white flour and sugar.  I also wanted to make it Dairy free, so I used coconut oil too!

I came up with these little mini Almond tarties (a mix between a tart and a cookie)!

Ingredients

            1/2 cup Honey

            1/3 cup Coconut Oil

            1 egg

            1 teaspoon almond extract

            1/2 teaspoon vanilla

            1 cup whole wheat flour

            1/2 teaspoon baking powder

            1/8 teaspoon baking soda

            1/2 cup chopped almonds

            1 ecipe Almond Glaze (optional)

Almond Glaze
            1/2  cup powdered sugar

            1/2  teaspoon almond extract

            2   teaspoons Almond milk

Directions

1.
Preheat oven to 325 degrees F. Line 16 muffin cups with silicon baking cups; set aside.

2.     In a small saucepan, melt and stir Coconut Oil and Honey over medium heat until smooth. Remove from heat; cool slightly. Stir in egg, almond extract, and vanilla.

Honey and Coconut Oil
Melted down honey and coconut oil

3.
In a small bowl, stir together flour, baking powder, and baking soda.

4.     Add flour mixture to oil and honey mixture; stir just until combined. Stir in 1/3 cup of the chopped almonds.

Batter all mixed up

5.
Spoon batter into silicon cups, filling each half full.

I used a cookie scoop for each Tartie

6.
Bake in the preheated oven for 14 minutes or until tops are lightly browned.

7.     Cool in muffin cups for 5 minutes. Remove from muffin pans; cool. Drizzle cooled cookies with Almond Glaze if you choose.

Make a tea and enjoy a Tartie or two!

Counting Christmas Trees

Fun and Educational, this christmas craft takes a little prep work but is so worth it!

I cut up these little trees and stars out of construction paper this morning and Asher has been working away on his little trees on an off most of the morning.  He did 4 trees and as I write this he is working on a few more.

This is a great way for kids to learn counting skills while making a fun little craft.

What you need:

3-4 sheets of Green construction paper
1 sheet of Yellow construction paper
scissors
pen for tracing trees and stars
pom poms
white glue
news paper or large brown paper bag to contain the glue mess

What and easy and fun craft and learning activity for Kindergarten age.  But if you have younger kids  it would still be fun just to cut out a few trees and have them glue the pom pons to the trees however they like.

Or you could try just counting to three instead of 10!

Now to turn this project into a Christmas decoration by gluing it to a larger sheet of paper!

Snowman Milk Jugs

Found this cute project at Free Fun Christmas and throughout it was too fun not to share!

What you'll need:

Milk Jugs
Pipe cleaner
Pom-poms
Cardstock
Adhesive

Instructions:

  • From black cardstock, randomly cut eyes and mouth shapes; eyes should be larger than mouth pieces
  • From orange cardstock, randomly cut triangles for nose.
  • Glue pieces to clean milk jug.
  • Glue chenille stems to both sides of milk carton creating an arch above eyes.
  • Glue pom-poms, jingle bells, etc. on the end of each chenille stem to create earmuffs.
I plan on making a few of these with Asher once I save up a few milk jugs!

Power Banana

One of my favourite breakfasts is this power banana!

For this one I used one sliced banana with natural Peanut butter, raisins and walnuts.

But I often use a variety of toppings

Peanut butter
Walnut butter
Sunflowerseed butter
Almond butter
(Nut or seed butter of your choice)

Raisins
Dried cranberries
Dried blueberries
Dried apricot chopped
Dates
(Any dried fruit really)

Walnuts
Cashews
Pecans
Almonds
(Any other nut you have on hand)

So simple. So quick to make but on a busy morning I find this power banana satisfying and filling too!

This also also makes a great snack!
