Turkey black bean lettuce wraps

What's for Dinner tonight?
Maybe these.....


Gord and I both love this healthy and satisfying dinner recipe.  The bonus is that it's super easy to prepare during the work week!

Turkey black bean Lettuce Wraps
Ground turkey or Chicken
4 TBSP low sodium soy sauce
1 clove garlic minced
1 shallot minced
1 tsp black bean sauce (optional)
I small zucchini Chopped into cubes
1/2 cup (measured when uncooked) cooked brown rice (optional)
1 head of butter lettuce (I got the kind that has the roots attached)
Marinate Ground turkey in soy sauce.
In large frying pan or wok brown garlic and shallot in sesame oil. Add in ground meat and cook through. While cooking, tear your lettuce and place on plates.
You can add in a tsp of black bean sauce for flavour or just keep it to the soy sauce. Throw in Zucchini near the end of the cooking process when the rice is almost ready to go in. Add in cooked rice. Stir for a couple minutes until sauce coats rice. Add more soy sauce if dry. The mixture should me moist but not too saucy.
Serve filling in side bowl with lettuce wraps on the side. Be generous with lettuce for each person.

Not only is this a Healthy Dinner, it's a good dinner idea for the 21 day fix.  But you would probably have to skip the soy sauce and stick to approved spices!
